| 摘 要： | 香料厨房的香料配料环节中,其料基配制工序主要由人工完成,因此无法对香料配料过程进行有效监管,也不便于质量管理的责任追溯.为实现标准作业和提高过程质量,在香料厨房的集控系统中增加了香料配料监管系统,该系统主要由数据库服务器、PC工作站、电子秤及条码扫描仪组成,可对配料作业过程自动监管,并将操作过程记录归档,便于对作业过程的回溯查询.实际应用效果表明,每批次配料中各单料质量误差由原来的0.05kg降低至0.02kg,并能及时发现配方匹配错误问题,实现了对人工配料过程的有效监管. |
