燕麦中活性肽实用价值研究现状

摘    要:燕麦属于禾本科燕麦属一年生草本植物,在我国种植历史悠久,遍及各山区,高原及北部高寒冷凉地带,是八大粮食作物之一。燕麦巾营养物质含量非常丰富,包含丰富的可溶性膳食纤维,维生素,矿物质及抗氧化成分,特别值得一提的是含量高达11.3%-19.9%的蛋白质,在粮食作物巾居首位。燕麦中蛋白质的氨基酸组成比较全面,必需氨基酸含量较其它粮食作物高两倍左右。因此,燕麦具有良好的保健功效,如降血脂,降血乐,降血糖,防癌及抗氧化等,这些都决定了燕麦产业广阔的发展前景。 生物活性肽(BAP)指的是一类分子量小于6000Da,在构象上较松散,具有多种生物学功能的多肽和小到10个氨基酸组成的小肽。据文献报道,活性肽在体内吸收快,利用率高,并且营养丰富,具有抗高血压,抗血栓形成,降血糖,抗癌,抗衰老,防止肝硬化等多种保健功能。

Abstract:In this work. DA201-C macroporous adsorption resin was used to purificate oat peptide hvdrolysates. The result showed that when the pH of oat peptide hvdrolvsates is 4.76, the adsorption ratio of DA201 -C is 68%. Different concentrations of alcohol were used to flush the medium, the effect of elution did not increase with the alcohol concentration' s increasing; the greatest effect of elution is 25% alcohol. After measuring, the concentration of protein is nmch lower than the concentration of amylase in the hydrolysates produced with Alcalase, but the concentration of protein is much higher than the concentration of amylase in the hvdrolysates purified with DA201-C, it demonstrates the best effect of DA201-C on desalting and desugaring. The molecular weight distributing of the hydrolysates produced with Alealase and hydrolysates purified with DA201 -C by Sephadex gel chromatography, through observing the elution profile of hydrolysates produced with Alcalase and the elution profile of hydrolysales purified with DA201 -C by Sephadex gel chromatography, I conclude protein and amylase is a combo in oat. Finally, the molecular weight of the hydrolysates purified with DA201-C measured by HPLC is from 438.56 to 1301.01.
