摘    要:高级醇是黄酒中主要的风味物质,适量的高级醇能赋予黄酒丰满的口感,增加酒体的协调性。但高级醇过量则会给黄酒带来异杂味并引起较强的致醉性。该文在综述国内外相关研究成果的基础上,对黄酒中高级醇含量的影响因素以及高级醇的检测方法进行了阐述,以期为黄酒生产过程中控制高级醇的含量提供参考。

Abstract:Higher alcohols are main flavor substances in Chinese rice wine. The appropriate content of higher alcohols can give Chinese rice wine with full taste and increase coordination of Chinese rice wine. However, excess content of higher alcohols would bring miscellaneous taste and cause strong intoxication. Based on relevant research results at home and abroad, the influence factors on the content of higher alcohols in Chinese rice wine and detection methods of higher alcohols were summarized in the review, in order to provide a reference for the control of the higher alcohols content during the production of Chinese rice wine.
