匀浆膳配方和加工工艺的研究

摘    要:目的优化管喂匀浆膳的配方,探寻适合于医院自行加工制作匀浆膳的工艺方法与设备。方法按照平衡膳食的原则,同时考虑患者需求特点,选择多种食物为原料进行配方设计,并对原有的加工工艺、设备进行改造。结论使用北京医院与北京航空工艺研究所共同设计的匀浆加工设备制作的管喂匀浆膳不仅能达到营养、理化、卫生学指标要求,而且大大提高了生产效率。

Abstract:The formula as well as processing technology for tube-feeding homogenized diet was optimized, and equipment was adapted in a hospital for processing of the diet. Based on the principle of nutrient balance, homogenized diet formula with various foods as raw materials were designed. And the traditional processing techniques and equipment were improved. The results showed that the tube-feeding homogenized diet could not only efficiently produced with the processing equipment designed by Beijing Hospital and Beijing Institute of Aviation Technology, but also satisfied nutritive value, physical, chemical and hygienic requirements.
