玉米芯可溶性膳食纤维制备及其抑菌活性

摘    要:以玉米芯为试验原料,采用响应面分析法(Response Surface Methodology,RSM)建立了动态高压微射流(DHPM)提取玉米芯中可溶性膳食纤维(SDF)得率的二次多项数学模型,验证了数学模型的有效性,并探讨了物料温度、均质时间和均质压力对SDF得率的作用规律,优化提取工艺参数。结果表明:物料温度50.0℃,均质时间6min,压力40 MPa,该条件下SDF提取率高达8.27%。DHPM-SDF对大肠杆菌、枯草芽孢杆菌、金黄色葡萄球菌和黑曲霉均具有一定的抑制效果,且抑菌作用随着浓度的增加而增强。

Abstract:Response surface methodology(RSM)was employed to optimize the process parameters of dynamic highpressure microfluidization(DHPM)extraction of SDF from corn cob.The adequacy of the model equation for predicting the optimum response values was verified effectively by the validation.The effects of materiel temperature,treatment time and pressure on yield of SDF were investigated.Maximum yield of SDF from the mathematical model was predicted to be 8.27%dry basis under the condition of temperature 50.0℃,time 6 min and 40 MPa.DHPM-SDF had obvious antimicrobial effect on experimental bacteria of Escherichia coli,Bacillus subtilis,Staphylococcus aureus and Aspergillus niger.Therefore,the bacteriostatic activity increased with the increase of concentration.
