花生红衣多酚-锌配合物的制备及其抗氧化性质

摘    要:采用超声波辅助法乙醇提取花生红衣多酚(PSP),将PSP与人体必需金属元素Zn2+配合,制备花生红衣多酚-锌配合物(PSP-Zn),采用响应面试验研究PSP-Zn制备条件,并研究其抗氧化性能。结果表明,在反应温度57.82℃、p H 5.86、质量比4.27︰1时,PSP与Zn2+的螯合率最高,为46.30%。PSP-Zn的清除DPPH自由基能力高于同浓度的PSP、VC、VE,且随浓度增加而增强;浓度1200μg/mL时,PSP-Zn的DPPH自由基清除率84%;PSP-Zn的清除羟基自由能力要略弱于PSP,且PSP-Zn和PSP的清除羟基自由能力均弱于同浓度的VC、VE。

Abstract:The peanut skin polyphenols were extracted by ultrasonic technology.The zinc complexes with peanut skin polyphenols(PSP-Zn)were prepared by coordination reaction.With chelate ratio as the main index,the coordination reaction was optimized by the response surface methodology,and the antioxidant activity of PSP-Zn was studied.The results showed that the optimum coordination conditions were 57.82℃,p H 5.86 and quality ratio 4.27︰1.Under such condition,the chelate ratio reached to 46.30%.The DPPH free radical scavenging activity of PSP-Zn increased with the increase of the concentration,and was higher than PSP,VC,VE with the same concentration.With the concentration of 1200μg/mL,the DPPH free radical scavenging activity of PSP-Zn was up to 84%.The hydroxyl radical(·OH)scavenging activity of PSP-Zn was slightly lower than PSP.With the concentration,the hydroxyl radical(·OH)scavenging activity of PSP and PSP-Zn were lower than VC and VE.
