摘    要:清凉化合物是重要风味物质。该文对清凉化合物的化学结构特点、风味形成机理、影响其风味因素及其制备方法等进行讨论,并介绍主要清凉化合物风味特性、功能、应用概况及发展前景。

Abstract:The cooling compound is an important special flavour material.The chemical structures of cooling compounds,the mechanism of cooling effect production,factors affecting cooling effect,and its preparative methods etc.were discussed reviewed.The introduction of main cooling compounds,their functions and characteristics of special flavour and their application general situation were re-viewed.
