摘    要:该实验研究了长沙臭豆腐生坯中微生物结构,以期为臭豆腐低温保存储运过程品质保障提供依据。以5种不同厂家低温保存臭豆腐生坯(编号为YYD1、HSJD2、CGL3、PJX4、JXF5)为研究对象,利用Illumina MiSeq高通量测序技术对其细菌多样性进行分析。结果表明,5种臭豆腐生坯样品中共得到342 560个有效的序列数(Tags),共注释到30个门和31个属。在门分类水平上,拟杆菌门(Bacteroidetes)和厚壁菌门(Firmicutes)在5种不同样品中占绝对优势;在属分类水平上,普雷沃氏菌属(Prevotellaceae)在所有样品中占绝对优势。根据主成分分析(PCA)可知,样品HSJD2、PJX4和YYD1的菌群结构相似,而样品JXF5和CGL3的菌群结构具有较大的差异。

Abstract:Microbial structure in Changsha stinky tofu Shengpei (semi-product) was studied, in order to provide basis for the quality assurance of stinky tofu during low-temperature storage and transportation. Using stinky tofu Shengpei (numbered YYD1, HSJD2, CGL3, PJX4, JXF5) stored in low-temperature from 5 different factories as research objects, the bacterial diversity was analyzed by Illumina MiSeq high-throughput sequencing technology. The results showed that a total of 342 560 valid sequence numbers (Tags) were obtained from 5 stinky tofu Shengpei samples, which belonged to 30 categories and 31 genera. At the phylum classification level, Bacteroidetes and Firmicutes had an absolute advantage in 5 kinds of different samples. At the genus classification level, Prevotellaceae had an absolute advantage in all samples. According to the principle component analysis (PCA), the flora structure of the samples HSJD2, PJX4 and YYD1 was similar, while the flora structure of samples JXF5 and CGL3 was quite different.
