摘    要:贵州作为我国最早种植辣椒的食辣大省,2020年辣椒生产及销售规模已达全国第一。依靠“香辣协调·品味温醇”的独特品质和依托全国食辣文化的发展潮流,近年来,贵州辣椒加工产业发展势头迅猛。该文从贵州辣椒加工业的发展现状即辣椒企业及优势产品的分布、产值情况等分析当前辣椒加工业存在的主要问题,旨在为推动辣椒加工业高质量发展提供建议参考。

Abstract:Guizhou, as the first pepper-cultivating and the biggest spicy-eating province in China, has reached the first place in the scale of production and marketing of pepper in 2020. Moreover, relying on the unique quality of "harmonious spicy & warm and mellow taste" and the development trend of national spicy food culture, Guizhou pepper processing industry has developed rapidly in recent years. The main problems existing in the pepper processing industry were analyzed from the development status of the pepper processing industry in Guizhou, that is the distribution and output value of the pepper enterprises and their superior products, in order to provide suggestions for promoting the high-quality development of the pepper processing industry.
