摘    要:真菌生长会导致粮食品质下降甚至真菌毒素污染,是造成粮食损失,引起食品卫生安全隐患的重要因素之一。当前,世界各国都十分重视粮食上真菌及真菌毒素污染的问题,明确粮食上真菌群落组成是真菌及毒素污染防控的关键。本文对粮食真菌的分类、危害以及我国粮食真菌群落组成及多样性研究进展进行了综述,介绍了真菌群落组成与真菌毒素污染的关系并探讨了真菌群落组成及多样性研究的应用前景,旨在为全面系统研究粮食真菌提供方法,从而为粮食真菌毒素精准防控的深入研究提供参考。

Research progress in community composition and diversity of fungi from the grain
Abstract:The growth of fungi leads to degradation of grain quality and mycotoxin contamination, which is one of the important factors of grain loss and potential risk in food safety. At present, every country in the world attaches great importance to the problem of fungi and mycotoxin contamination in grain. Make sure that clarifying the fungal community composition of grain is the key to prevention and control of fungi and mycotoxin. The main objective of the review was to describe the classification and danger of grain fungi, as well as the research progress of fungal community composition and diversity of grain fungi in China. We introduced the relationship between fungal community composition and mycotoxin contamination, and discussed the application prospect of fungal community composition research, with the aim of providing the methods for comprehensive and systematic research of the grain fungi, and providing some references for further research on the precise prevention and control of grain mycotoxin contamination.
