| 摘 要： | 对一种古老而新型的酒精性发酵乳饮料－开菲尔（Ｋｅｆｉｒ）作了一般性介绍。国际上对Ｋｅｆｉｒ引起极大兴趣，并进行了深入的科学研究，取得了很大成果，本文对此作了综述。关于Ｋｅｆｉｒ的语源和定义，Ｋｅｆｉｒ的规格标准，Ｋｅｆｉｒ粒，Ｋｅｆｉｒ含有的营养成分及对人体生理功能和Ｋｅｆｉｒ制法及其进步作了叙述。
