大别山野生四叶参营养成分分析

摘    要:测定大别山野生四叶参中水分、脂肪、总糖、蛋白质、氨基酸、常量元素和微量元素含量.采用恒重法测定水分含量;索氏提取法测定脂肪含量;斐林试剂热滴定法测定总糖含量;全自动凯氏定氮法测定蛋白质含量;柱前衍生反相高效液相色谱法测定氨基酸含量;原子吸收分光光度法测定Ca、Mg、Cu、Zn、Fe、Mn、Se含量;可见分光光度法测定P含量,测定结果显示:四叶参中水分、粗脂肪、总糖、粗蛋白质含量分别为6.55、3.31、54.83、9.15 g/100g;氨基酸至少有12种,总氨基酸含量为5.15 g/100 g,必需氨基酸含量为0.70 g/100 g.微量元素Cu、Zn、Fe、Mn、Se的含量分别为:1.19、3.64、20.01、22.09、6.82 mg/100 g.常量元素Ca、Mg、P含量分别为:0.15、0.11、0.96 g/100g.大别山野生四叶参营养成分丰富,具有广阔的开发应用前景.

Abstract:The nutritional components and elementary Analysis of Codonopis Lanceolata is analyzed in this paper.Content of water was analyzed by constant weight method.Crude protein content was determined by Kjeltec analyzer.Crude Fat content was tested by soxhlet method.Total sugar content was tested by Fehling's reagents hot titration method.Metallic elements content was detected by AAS.Phosphate content was determined by visible spectrophotometer.The amount of nutritional components contained in Codonopis Lanceolata as following: water 6.55,crude fat 3.31,total sugar 54.83,crude protein 9.15 g/100 g;total amino acid 5.15 g/100 g,essential amino acid 0.70 g/100 g;minor elements: Cu 1.19,Zn 3.64,Fe 20.01,Mn 22.09 mg/100 g,Ca 0.15,Mg 0.11,P 0.96 g/100 g.The results indicate that Codonopis Lanceolata is rich in nutrients,and is a favorable nutrition source of healthy food making.
