2，5—二甲基—4—羟基—2，3—二氢呋喃—3—酮（菠萝酮）的合成研究

2,5-二甲基-4-羟基-2,3-二氢呋喃-3-酮即菠萝酮,是一种具有很强烈的焦糖样甜香、略带淡的蚕豆花香气息的香料,可广泛应用于食品、饮料、冰淇淋、香烟等产品中。国际上合成菠萝酮最有名的公司是瑞士的芬美意公司,日本的曾田公司也有产品供应,近两年大连的金菊也开始小批量供应市场。广州市轻工研究所于1997年开始探索菠萝酮的合成路线,开发了一种新的工艺,并于1999年建成2t/a的中试装置,于2000年通过专家的鉴定和验收。该工艺生产的产品经厂家应用评价认为,香气整体风格与瑞士芬美意公司的产品接近,但香气稍弱。

Research on Synthesis of 2,5-dimethyl-4-hydroxy-2,3-dihydro-3-furanone (Pineapple-ketone)

2,5-dimethyl-4-hydroxy-2,3 -dihydro-3-furanone which is called pineapple-ketone is widely used as a perfume in food, drink, ice-cream and cigarette products with strong caramel odour and weak broad bean flower smell. Swiss Firmenich Aromatics Co. , Ltd. is a famous company in producing pineapple-ketone and Japan Soda Aromatic Co. , Ltd. also supply this product. In recent 2 years Jinju Company in Dalian began to supply the market in small quantities. Guangzhou Light Industry Research Institute began to explore the synthesis process of pineapple-ketone in 1997 and developed a new technology. A pilot plant with a capacity of 2 t/a was constructed in 1999 and the project passed the experts'appraisal and acceptance in 2000. The application and assessment of the product based on this technology show that the whole style of perfume is close to that of Swiss Firmenich Aromatics Co. , Ltd. products but a little weakness.
