摘    要:食用油精准适度加工克服了过度加工的弊端,既是生产"好油"的一种新模式,也是产业转方式、调结构、促发展的重要途径。回顾了精准适度加工理论提出的历史背景和营养学渊源,介绍了其工程实践及取得的重大成效,展望了其发展趋势,旨在为新模式在我国油脂加工业中的大规模推广应用提供依据。

Abstract:Accurate and moderate processing of edible oil overcomes the drawbacks of over-processing.This kind of processing not only raises a new model for producing"good oil",but also provides an important mode of industrial transformation and development. The historical background and nutritional origins of the theory of accurate and moderate processing were reviewed. Its engineering practice and significant achievements were introduced,and its development trend was predicted,so as to lay foundation for the large-scale application of the new model in China’s oil processing industry.
