| 摘 要： | 系统地阐述了二氧化硫(SO2)在红葡萄酒生产中抗氧化性的研究状况。通过大量的文献分析认为，二氧化硫在红葡萄酒中并不能表现出抗氧化特性。因此，寻求新的红葡萄酒抗氧化剂就成为主要的研究方向之一。
