草莓高氧MAP技术的研究

摘    要:研究了高氧MAP及其结合3种不同预处理的包装技术对常温下草莓货架寿命的影响.结果表明,利用OPP(厚度0.030mm)薄膜明显优于 LDPE(厚度0.039mm)、LDPE(厚度0.048mm)和HDPE(厚度0.025mm)薄膜;高氧MAP可以有效地降低草莓的失重率、腐烂指数和褐变指数,且有效地保持了草莓的各项感官品质指标;3种预处理技术中,高氧MAP结合钙化处理能更好地延长草莓的货架寿命.

Abstract:The effect of high oxygen content MAP and its combinations with three different pretreatments on shelf life of strawberry in normal temperature were studied. The results showed that the membrane OPP(thickness 0.030mm)was superior to the membrane of LDPE(thickness 0.039mm),LDPE(thickness 0.048mm),and HDPE(thickness 0.025mm).
