黑小麦保健酒研制工作报告

摘    要:用黑小麦代替小麦并搭配适量大麦、豌豆,进行制曲生产试验。试验曲分两种,一种为纯黑小麦曲,一种为混合黑小麦曲。将所制试验曲采用5种方案进行黑小麦酿酒试验,还采用4种方案进行黑小麦浸泡试验。结果表明:试验曲多项检测指标优于普通曲。黑小麦酿酒试验方案3,发酵情况及酒质较好。浸泡试验中方案1酒质好。就微量元素变化看,经酿酒试验表明铁含量均降低;但在浸泡试验中,铁含量有升有降。除酿酒方案1外锌含量均上升,硒升高甚微。

Abstract:The trial of Daqu production was conducted with the black wheat instead of an appropriate amount of wheat, barley, and peas. Both pure black wheat Daqu and mixed black wheat Daqu were investigated. Adopts 5 schemes for brewing trial with these trial daqu, also adopts 4 schemes for black wheat soaking trial. The results show that: the indicators on trial daqu are better than ordinary daqu. Fermentation and liquor quality of brewing trial scheme 3 is beteer than others;Wine quality of black wheat soaking trial Scheme 1 is beteer than others. On the changes of trace elements, the content of iron is decreased after brewing trial; but after the soaking trial, some rise, some fall. Zinc besides brewing trial scheme 1 is increased, selenium is increased a little.
