“黑美人”马铃薯中色素的提取工艺研究

摘    要:"黑美人"马铃薯是由兰州陇神航天育种研究所历经三载选育成功的土豆新品种,其中富含具有明显抗氧化作用的保健型天然花色苷色素。在单因素试验基础上,采用正交试验对"黑美人"马铃薯中色素的最佳提取条件进行了研究,并探讨了该色素的稳定性。研究结果表明:采用浓度为1.1%的盐酸-乙醇溶液为浸提剂,在温度50℃、料液比1:40、提取时间1h的条件下提取"黑美人"马铃薯,色素的产率最高。

Abstract:"Black Beauty" Potato is a new variety successfully chosen and cultivated by Lanzhou Longshen Institute of Space Breeding after 3 years of efforts, which contains natural and healthcare anthocyanin pigment with strong anti-oxidation effects. Based on single-factor tests, orthogonal ones were applied to study the optimum conditions for extracting the pigment from "Black Beauty", and its stability was investigated as well. The results suggested that the yield of the pigment was highest on the condition that 1.1% hydrochloric acid-ethanol solution was used as the extraction agent, and the extraction was carried out at 50℃ for 1 h, with a solid-liquid ratio of 1 : 40.
