木聚糖酶在玉米原料酒精发酵中的应用研究

摘    要:探讨了木聚糖酶对玉米原料酒精发酵的影响.经优化后木聚糖酶的最适使用工艺为:木聚糖酶在发酵开始时加入,添加量为170U/g,料水比为1:2.5,初始pH值为自然.与对照组相比,原料出酒率提高5.93%,发酵周期缩短了12h,表明木聚糖酶对玉米原料酒精发酵有明显的促进作用.

Abstract:Application of xylanase in alcoholic fermentation by corn was investigated in this paper.The optimum parameters and technology were as follows:adding xylanase at the beginning of fermentation,by 170U/g,the ratios of material to water at 1:2.5,and with natural pH.Compared to fermentation without application of xylanase,the output rate of raw materials was increased by 5.93% and the fermentation period was shortened by 12 h.The results showed that the application of xylanase could significantly improve alcoho...
