| 摘 要： | 利用超浓缩复合己酸茵液进行窖泥复壮可进一步提高窖泥微生物功能；己酸乙酯含量整窖(600kg)平均比对照样增加81．06mg／100ml，四大酯比例协调，浓香突出，爽净，回味悠长，提高原酒质量效果显著。

| Abstract: | Hyperconcentration composite caproate acid bacteria solution was used for pit mud revivification and its application could improve microbe functions in pit mud.Ethyl caproate content in treated pit(600kg capacity)increased81.06mg /100ml than that in original pit.Besides,harmonious proportion of four esters could effectively improve liquor quality and make liquor clean and longer af-tertaste.(Tran.by YUE Yang) |
