摘    要:炮制技法与烹饪技法自古以来就有着密切的联系,并经过了长年累月的发展。这是从技术角度对“医食同源”的解释。所以炮制技术也可应用于烹饪现代的药膳料理。在进行药膳烹饪的时候,不仅要注意食材与药材搭配,还要以炮制理论为基础,从炮制的角度考虑加热与调味,进行科学合理的药膳烹饪,从而达到强化食材性味与功能的效果。

The Significance of Frying Skills in Medicative Diet Cuisine

Abstract:The close association between medicine processing method and cuisine making skill can be traced back to ancient times, and it develops over years, which is interpreted as "medicine and food having the shared sources" in terms of technological perspective. Medicine processing skills are also applicable in medicative diet cooking in modern cuisine. Food ingredients flavor and function can be enhanced on the basis of appropriate confection of food ingredients and medicinal materials, medicine-processing-theory-based heating and seasoning and scientific medicative diet cooking.
