掌裂草葡萄总黄酮对食用油脂的抗氧化性研究

摘    要:研究了掌裂草葡萄总黄酮对食用油脂的抗氧化性,以总黄酮提取物降低油脂脂质过氧化作用的POV值为考察指标。结果显示,掌裂草葡萄总黄酮提取物能有效延缓油脂脂质过氧化作用,并随着提取物添加量的增加,抗氧化作用也随之增强。当50 g油脂中加入提取物0.036 g时,其抗氧化效果与加入0.01 g BHT相近,加入提取物质量大于0.036 g时,其抗氧化效果优于加入0.01 g BHT。

Abstract:Aconiteleaf ampelopsis palm [ Latin name : Ampelopsis aconitifolia Bge. var. palmiloba ( Carr. ) rehd. ] total flavonoids to the antioxidant activity of edible oils and fats. Total flavone extract reduces fat POV value study of lipid peroxidation indexes. The results showed that palm ampelopsis total flavonoids extract can effectively delay the oil lipid peroxidation, and with the increase in the amount of extract add- ed, antioxidation also increases. When 50 g grease was added to the extract O. 036 g, similar antioxidant effect by adding 0.01 g BHT,add to extract mass greater than O. 036 g,superior to its antioxidant effect by adding 0.01 g BHT.
