摘    要:目前我国食用油脂掺假现象仍很常见,严重影响人民身体健康,是油脂食品安全问题重中之重。该文就油脂掺假现象从感官检验、定性检验和定量检验三个方面,对目前国内外油脂掺假检测方法进展进行综述。

Abstract:At present,the phenomenon of adulteration in edible oils and fats has becoming the most important food safety issues cause it has seriously impacted peoples ’ health.This article reviews the detection methods of mixed different edible oils and fats by the sensory testing,qualitative and quantitative testing.
