摘    要:随着最近媒体的频频曝光,“地沟油”这个名词再次出现在公众的视野当中,许多地方出现了地沟油回流到餐桌上的现象。为了迅速鉴别地沟油,我们摸索各种实验条件,其中包括超声革取方法和加热革取方法,目的均是为了迅速把油脂中的钠离子迅速苹取出来,再使用原子吸收分光光度法来测定钠元素的含量,并与合格食用油中革取的钠离子进行对比。实验结果表明加热革取方法无论在革取效果和苹取效率上均优于超声革取方法,因此该苹取方法结合原子吸收分光光度法可以作为鉴别地沟油方法之一。

Abstract:Recently, the word "hogwash oil" appears again in the public eyeshot, and the "hogwash oil" is back to restaurant in many places. We explored a lot of experimental methods, extracted the sodium ion from the grease, including the method of ultrasonic extraction and heating extraction, then tested the concentration of the sodium ion by the AAS and compared it with the sodium ion from regular oil. The result indicated that heating extraction method is better than ultrasonic extraction method on both effect and efficiency, so the former combining with AAS can be one of the methods identifying "hogwash oil".
