超高效液相色谱技术在食品安全检测中的应用

摘    要:超高效液相色谱(UHPLC)技术是在高效液相色谱(HPLC)技术的基础上,进一步利用亚微米颗粒填料、超高压输液泵、低死体积系统及快速检测等特点发展起来的分析检测技术,具有更高的分离度、分析速度和检测高灵敏度。本文综述了近年来UHPLC技术在食品安全检测中的应用,特别是在检测农药残留、兽药残留、食品添加剂、非法添加物以及有毒物质等方面取得的研究成果。

Abstract:Ultra high performance liquid chromatography (UHPLC) technology is an innovative liquid chromatography technology. It takes advantages of small particle packing, low system volume and rapid detection techniques, and has very significant increases in resolution, speed, and sensitivity. This paper reviews recent applications of UHPLC in the food safety analysis, particularly in analyses of pesticide residue, veterinary drug residue, food additives, illegal additives and toxic substances.
