胡椒粉掺假的鉴别研究

摘    要:本研究采用高效液相色谱测定胡椒粉中非挥发性辣味呈味物胡椒碱,判定胡椒粉是否掺假,真伪掺假平均相关系数为0.99985。本研究方法具有操作简单,快速,判定准确的特点,胡椒样品中掺入最小检知量为5%。

Abstract:The non-volatile and peppery taste piperine in pepper powder was tested by HPLC to identify the authenticity of pepper powder. The average correlation coefficient of authenticity of pepper powder was 0.99985. This method is simple, rapid and accurate. The minimum detectable rate is 5%.
