高湿挤压米糠渣中可溶性膳食纤维制备工艺的研究

摘    要:为得到酶法制备高湿挤压米糠渣中可溶性膳食纤维的最适制备工艺参数,以高湿挤压米糠渣为原料,研究料水比、纤维素酶添加量、溶液pH、反应温度、反应时间等因素对可溶性膳食纤维提取量的影响,通过单因素试验和正交试验,确定最佳制备条件为:料水比1:15,纤维素酶添加量0.8%,溶液pH4.5,反应温度55℃,反应时间1.5h。在此条件下,制备的可溶性膳食纤维产率为24.14%,明显高于未经高湿挤压的米糠渣。
