淮山药葡萄梨复合运动饮料的研制

摘    要:以淮山药、葡萄、梨为原料,复配生产复合运动饮料,结果表明:当淮山药、葡萄、梨原汁比例为30:30:40时,产品的感官品质最优。通过正交试验确定了不同稳定剂的最优添加比例。当黄原胶、卡拉胶、羧甲基纤维素(CMC)的添加量分别为0.3%,0.2%,0.3%,产品的稳定性最好。

Abstract:The complex sports beverage were produced with the composition of commonyam rhizome,grape and pear in this paper.Results indicated that:the sensory qulities were most optimum when the proportion of commonyam rhizome,grape and pear were 30:30:40.The most excellent added proportion were determined by orthogonal experiments.The stability of production were best when the added dosage of xanthan gum,carrageenan,carboxymethyl cellulose were 0.3%,0.2%,0.3%,respectively.
