摘    要:对长城和王朝葡萄酿酒公司的15种原酒进行了10000转/min高速离心预处理后,利用高效液相色谱法(HPLC)测定其中有机酸。结果表明:葡萄酒中主要有机酸成分是酒石酸、L-苹果酸和L-乳酸,柠檬酸、琥珀酸和乙酸的含量很少;干白酒中几乎不合有L-乳酸;干红酒中含有L-乳酸,但L-苹果酸和柠檬酸含量相应减少,甚至为0;在所测酒样中,长城原酒中的总酸含量比王朝原酒中的高,主要是酒石酸的含量高。

Abstract:An HPLC was employed to determine organic acids in wine.By synthesizing test on chromatographic separating conditions including chromatographic column,teperature,mobile etc,the optimal chromatographic separating condition was established.We compared different pretreating methods as adding bleaching earths and active carbon.The final preteating method was obtained:Centrifugalizing sample at a high speed 1000 rotation/min directly is enough.Finally 15 kinds of original wine from The Great Wall and Dynasty wine brewing company were amalyzed.The relative standard deviations ranged from 1.8% to 4.5%,and the recovery rates were from 94.5% to 103.1%.This method is rapid,convenient and caaurate.
