果蔬的综合加工研究

摘    要:中国果蔬产量居世界首位,果蔬产品是最具潜力打入国际市场的园艺产品。该文着重介绍了果蔬饮料、果蔬粉、果蔬脆片、果蔬罐头、谷、菜复合食品以及果蔬中有效功能成分的提取等果蔬综合加工产品的特点及其加工技术,并展望了果蔬产品的发展前景,目的是为果蔬产品的进一步开发以及农产品的发展提供参考。

Abstract:The yield of Chinese vegetable and fruit is the first in the world and the products are the most potential gardening products that will enter international market. This article introduces characteristic and technology of comprehensive processing products of vegetable and fruit, for example, drink, pink, crisp patch,can,the distilling of the effective function components of vegetable and fruit,compound food of corn and vegetable, etc. It shows the prospect of vegetable and fruit products, too. The purpose is to provide the reference for exploitation of the vegetable and fruit products and development of agriculture products.
