| 摘 要： | 在对多不饱和脂肪酸自动氧化作用的机理进行回顾的基础上，对黄酮类化合物防止脂质氧化的可能性进行了探讨，特别是对抗氧化作用与黄酮类化合物结构之间的关系上进行了讨论。同时，对于一些从植物中提取出的黄酮类化合物的抗氧化的实例进行了重点的介绍。

| Abstract: | Mechanism of autoxidiation of polyunsaturated fatty acid was reviewed,and on the basis of this,possible effect of flavonoid on preventing lipid from oxidation was discussed,particularly the relationship between the capacity and structure of flavonoid. In the meatime,some examples of natural occurring flavonoid with antioxidative effect were mentioned with emphasis on the flavonoid isolated from herb. |
