摘    要:简要介绍了超高压食品加工原理和工艺流程,重点对用于规模化生产的大型超高压食品加工装备系统若干技术关键包括超高压容器筒体结构、设计方法、装备系统配置与安全等进行了分析和讨论,并且有针对性地提出了设计技术解决方案。

Abstract:By briefly introducing the principle and technical flow of super-high pressure food processing,this paper is particularly emphasized on the analysis and discussion of the key technical issues of large-scale super-high pressure food processing equipment for mass manufacturing,this issues including the shell structure of super-high pressure,design method,equipment configuration and it's safety.The paper has also provided pertinent technical solutions.
