摘    要:以往在营养学领域主要的研究课题都是如何防止营养缺乏。然而,随着生活条件的提高,营养缺乏逐渐减少,反而出现由于营养过剩引起的诸多疾病如肥胖、糖尿病等,因此不得不使营养学领域对营养进行重新评价。抗营养学领域又兴起一股抗营养因子的研究热潮,而苦荞麦中的抗消化淀粉和抗消化蛋白所具有的生理功能也引起了人们越来越多的关注。

Abstract:Anciently,in dietetics field,the primary research tasks are all about how to avert the lack of alimentation.Whereas,along with the advance of our life qualification,people afterwards are no longer devoid of nutrition,instead a good many illnesses come forth as a result of the plethora of nutrition,such as adiposity,diabetes mellitus and so on.Wherefore,the persons in dietetics field have to carry through the reappraisal on pabulum.A study upsurge has risen in anti-dietetics terrain,and that,the physiology function of Resistant starch and Resistant Protein in bitter buckwheat has aroused the attention of an increasing number of people.
