蛋白酶产生菌LN02发酵玉米黄粉蛋白的条件优化

摘    要:通过单因素实验和正交实验初步优化了蛋白酶产生菌LN02发酵玉米黄粉蛋白的条件。结果表明,菌株LN02发酵玉米黄粉蛋白的最佳条件为:初始pH值5.5、装液量60 mL/250 mL三角瓶、发酵温度35℃、发酵时间5 d。

Abstract:Through single factor experiment and orthogonal experiment,the fermentation conditions of corn gluten protein by protease producing strain LN02 were optimized.The results indicated that the optimum fermentation conditions were as follows:the initial pH value was 5.5,the amount of broth in flask was 60 mL/250 mL,the fermentation temperature was 35 ℃,and the fermentation time was 5 d.
