| 摘 要： | 为了解食物中丙烯酰胺对人体健康的影响，综述了食物中丙烯酰胺的来源及影响因素，人群通过食品的丙烯酰胺暴露量评估（吸烟、食品和职业暴露），丙烯酰胺生物转化和排泄以及毒性研究的现状。
