椰肉乙醇提取物抗氧化性的研究

摘    要:主要从清除超氧阴离子自由基、还原力、清除DPPH自由基、清除羟基自由基等方面,研究椰肉乙醇提取物的抗氧化性.结果表明,椰肉乙醇提取物对超氧阴离子自由基、DPPH·自由基和羟基自由基都有较强的清除能力;与VC、BHT和没食子酸相比较,椰肉乙醇提取物对Fe2+的络合能力最强;同时椰肉乙醇提取物还有一定的还原能力.因此,椰肉乙醇提取物是一种具有全面抗氧化功效的活性物质,具有很好的保健功能.

Antioxidant Effect of Ethanol Extract from Coconut
Abstract:The antioxidant effects of the ethanol extract from coconut studied in this work cover super oxide radical scavenging activity, reducing power, DPPH radical scavenging activity, hydroxyl radical scavenging activity, and so on. Results: The ethanol extract from coconut has high scavenging activities to super - oxide radical, DPPH radical and hydroxyl radical. Compared with VC, BHT and gallic acid, the metal chelating activity of the extract from coconut is the highest among them; moreover, the extract has certain reducing power. It means that the ethanol extract from coconut has general capacity of antioxidation and high health care function.
