超声强化椰子油水解的研究

摘    要:对超声强化椰子油水解进行了研究。试验表明,声强对水解效果的影响显著,探头式超声强化效果远优于槽式超声,且影响水解的主要因素为乳化剂(十二烷基硫酸钠)与酸用量、功率及作用时间。在确定主要影响因素的基础上,采用均匀设计试验法确定了各最佳参数:在乳化剂用量0.9%、酸用量0.2%、功率600W的条件下,作用5min,可使酸值达12mgKOH/g样左右。结果显示,按所提出的方法进行处理,可在温和的条件下使油脂水解的诱导期大大缩短。

Abstract:The hydrolysis of coconut oil assisted by ultrasound was studied. The results show that the ultrasonic intensity affects the efficiency of hydrolysis remarkably, the performance of probe type is much better than that of tank type. The main effect factors are emulsifier dosage, acid concentration, power and treating time. Furthermore, the optimal parameters are determined by uniform design experiment. Under the conditions of emulsifier dosage 0.9% , acid 0.2% , 600 W and 5minutes, the acid value may reach to about 12(mgKOH/g sample). It is also indicated that the induction period can be shortened greatly under mild conditions if the method put forward in this paper is adopted.
