摘    要:建立了一种测定乳与乳制品中蛋白质含量的方法。利用6份乳与乳制品作为试验材料,通过考马斯亮蓝比色法测定其蛋白质含量。结果表明,工作曲线在0~0.18 g/100 mL范围内线性关系良好,线性相关系数为0.999 3,平均加标回收率为98.13%,相对标准偏差小于5%,方法的检出限为0.02 g/100 mL,该方法具有操作简便、重现性好、准确可靠等特点。

Abstract:A determination method of protein content of the milk and dairy products is established. Six milk and dairy products were taken as test material by Coomassie Brilliant Blue colorimetric to determinate protein content. The results show that the working curve in a range of 0- 0.18 g/100 mL leads a good linear relationship, the linear correlation coefficient is 0. 999 3, the average recovery is 98.13%, the relative standard deviation is less than 5 %, the detection limit is 0.02 g/100 mL and the method is simple, reproducible, accurate and reliable.
