摘    要:葡萄酒具有丰富的营养价值和良好的保健功效,近年来深受人们的喜爱。葡萄栽培中滥用农药会使其残留在葡萄上并最终转移到葡萄酒中,长期饮用会损害人体健康。随着人们食品安全意识的提高,葡萄酒的农药残留问题逐渐受到关注,因此建立适合葡萄酒中农药残留的分析方法对保障食品安全有非常重要的意义。目前研究葡萄酒中农药残留分析的方法很多,其中以色谱技术为主。本文对近年来应用于检测葡萄酒中农药残留的色谱分析方法——气相色谱法、气相色谱质谱法、气相色谱串联质谱法、高效液相色谱法、液相色谱串联质谱法和气/液相色谱-高分辨质谱法的优点和限制因素进行了概述,并对其发展前景进行了展望。

Abstract:Wine has rich nutritional value and good health effects, it has become more and more popular in recent years. Abuse of pesticides in cultivation will cause pesticide residues on grapes and eventually transfer to wine, long-term drinking will damage human health. With the improvement of people''s awareness of food safety, the problem of pesticide residues in wine has gradually attracted attention. Therefore, the establishment of analytical methods suitable for pesticide residues in wine is of great significance to ensure food safety. At present, there are many methods for studying the analysis of pesticide residues in wine, among which chromatography is the main method. This paper summarized the advantages and limiting factors of the chromatographic methods for pesticide residues in wine, including gas chromatography, gas chromatography-mass spectrometry, gas chromatography-tandem mass spectrometry, high performance liquid chromatography, high performance liquid chromatography-tandem mass spectrometry and gas/liquid chromatography-high resolution mass spectrometry. Their development prospects was prospected.
