电感耦合等离子体质谱联用技术在食品中5种元素形态分析中的应用

摘    要:电感耦合等离子体质谱法(inductively coupled plasma mass spectrometry, ICP-MS)在微量元素分析, 尤其是元素形态分析中起着越来越重要的作用。随着对食品中元素存在形态的含量的要求越来越多, ICP-MS单机技术已经不能满足现有的检测需求, ICP-MS联用技术逐渐发展起来。ICP-MS联用技术主要采用色谱进行分离, 电感耦合等离子体质谱法进行检测, 主要的联用技术有液相色谱、气相色谱、毛细管电泳等与电感耦合等离子体质谱仪联用。铅(Pb)、砷(As)、汞(Hg)、锡(Sn)等元素在自然界中的存在形态很多, 其存在形态不同, 毒性相差也比较大; 而硒(Se)作为人体必需的微量元素, 硒的存在形态决定了人体对硒的吸收, 间接影响了硒在人体的生物学活性。本文主要对电感耦合等离子体质谱法联用技术在分析食品中存在的5种微量元素Pb、As、Hg、Sn、Se的应用研究进展进行了概述, 以期为深入研究食品重金属元素的形态标准提供参考。

Abstract:Inductively coupled plasma mass spectrometry (ICP-MS) plays an important role in elemental analysis, especially in elemental speciation analysis. With the increasing requirement for the content of the existing forms of elements in food, ICP-MS stand-alone technology can no longer meet the existing detection needs, and the technology of ICP-MS related hyphenated techniques is developing gradually. The elemental speciation is separated by high performance liquid chromatography (HPLC) or gas chromatography (GC) or capillary electrophoresis (CE), and then detected with ICP-MS. In nature, there are many existing forms of lead, arsenic, mercury, stannum. It has been recognized that the toxicity are existing form-dependent. Selenium (Se) as a necessary trace element, the existing form determines the absorption and influences the biological activity. This paper summarized the developed progress application of ICP-MS related hyphenated techniques in speciation analysis of 5 kinds of elements in food, in order to provide a reference for in-depth study of the morphological standards of heavy metal elements in food.
