胶原蛋白水解物戊二醛改性研究

摘    要:本文对胶原蛋白水解物进行了戊二醛改性,研究了戊二醛用量、温度、pH值、反应时间对改性的影响,确定了获得最佳乳化性和乳化稳定性的最佳改性条件,并对改性前后胶原蛋白水解物在乳化性、乳化稳定性、分子量、吸水性、吸油性和保水性方面的差别进行了比较。

Abstract:Collagen hydrolysate was modified with glutaraldehyde in this paper.Effect of such factors as dosage of glutaraldehyde used,reaction temperature,pH value and reacting time in the process of modification were studied,and the best conditions for obtaining modifying products with the best emulsification and emulsion stability were determined.The changes of such properties as emulsification,emulsion stability,molecular weight,water absorption,oil absorption and water maintenance of the collagen hydrolysate before and after modification were also compared.
