Adsorption of Wheat alpha-Amylase Isoenzymes to Wheat Starch

Abstract:Two groups of α-amylase isoenzymes have been identified in germinated wheat, but only one group would adsorb on to undamaged starch granules. This group represented 84.2% of the total α-amylase activity. The non-adsorbing isoenzymes were electrophoretically identical to the α-amylases of immature wheat grain.
