摘    要:阐述两类方法、一个原则:乳及乳制品蛋白质掺假特异性检测方法和乳及乳制品蛋白质掺假非特异性检测方法;任何一种乳品蛋白质掺假检测方法的建立都要以某一特定蛋白质差异性为依据的原则。

Abstract:Two methods with one principle for identifying protein adulteration in milk and dairy products have been summarized in this paper.Two methods were focused on specific and non-specific identification of protein adulteration in milk and dairy products.The main principle for establishing these detection methods was concentrated on the difference among specific proteins in adulterated milk and dairy products.
