摘 要: | 谷氨酰胺转氨酶(TGase)是一种可催化酰基转移反应的酶。该文就此酶来源、作用机理及其在一些主要谷物制品加工(非面筋质、面筋质制品及其延伸化产品等领域)中应用新进展作一综述。

Abstract: | The enzyme transglutaminase(EC 2.3.2.13) catalyzes an acyl transfer reaction between the γ-carboxyamide group of peptide-bound glutamine residues as acyl donors and primary amines as receptors.The resources of this ezyme,its acting mechanism and its applications in cereal products(non-glutenous,glutenous,and their derivated products) were summarized in this article. |
