摘    要:综述了冷却肉的国内外研究现状,指出目前我国冷却肉生产和消费所存在的问题,并对冷却肉的发展前景进行展望,对我国冷却肉的进一步开发和研究具有一定的参考意义。

Abstract:The paper overviewed the research situation of chilled meat at home and abroad,and questions of production and consumption of chilled meat were analyzed also.Further more,the development prospect of chilled meat were forecasted.This review will give some reference on the development and research of chilled meat.
