Abstract:The biological characteristics of Aspergillus oryzae was introduced in this article.The application of A.oryzae in fixings,feed,koji acid production,elimination of lactose intolerance symptom,brewing,and many more were summarized according to its characteristics.Its development prospect was also proposed accordingly.
