木瓜蛋白酶降解壳聚糖的研究进展

摘    要:利用非专一性酶降解壳聚糖生成具有重要生理活性和功能性质的甲壳低聚糖,这已成为近年来甲壳素科学领域中的一个研究热点。木瓜蛋白酶属巯基蛋白酶,广泛存在于番木瓜的茎叶和果实中,它是用于降解壳聚糖的非专一性酶中一种典型的商业酶制剂。本文详细介绍了近年来国内外木瓜蛋白酶降解壳聚糖的研究进展。

Abstract:Chitosan was hydrolyzed by non - specific enzymes into chitooligosacchrides with some interesting functional properties and physiological activities, which have attracted many researchers in chitin science in recent years. Papain is a sulfhydryl protease from the stem and fruit of Carica papaya widely. The recent developments of research at home and abroad on depolymerization of chitosan by papain were introduced in this paper.
