摘    要:分析了大环糊精的结构与功能,综述了国外大环糊精研究的最新成果,展望了其在食品工业方面的应用前景。

Abstract:Large cyclodextrins consist of a series of molecules with glycosyl units from 9 up to several hundred. This review summarises the new progress of large cyclodextrins in the fields of nomenclature, molecular structure utiliaztion,their potential value for food industry in future was analyzed as well.
