Theme expression is an important way to create the environment in restaurant, for it satisfies people's social demand and cultural demand, and it is the spirit of the restaurant space. The source of conception for the restaurant space is wide-ranging. This paper is focused on the theme expression in several respects such as the texture and color of the material, characteristic of regional culture, theme of nostalgia, relation with arts and sports and the theme of the story schemed by the designer. The paper probes the organic relations among the dietetic culture, the conception of the environment and the psychology of customers. The methods in dealing with the expression of space are discussed.
