| 摘 要： | 研究了重硫氧与复合高分子絮凝剂对复溶赤砂糖脱色的效果。运用均匀试验得出各因素对色值的影响大小顺序：聚二甲基二烯丙基氯化铵用量〉温度〉重硫氧用量〉聚硅酸硼锌用量〉pH值；最佳工艺条件为：重硫氧用量0．20g，聚二甲基二烯丙基氯化铵用量1．0ml，聚硅酸硼锌用量0．12ml，pH值7.0，温度70℃。复溶赤砂糖汁脱色率达到41％。
